Old Elk Blended Bourbon

This is a high malted barley bourbon mash bill with 34% malted barley, 51% corn and 15% rye. THey use a process called “slow proofing” which allows flavors to layered and a taint lighter and more floral flavors of the whiskey. This involves proofing the whiskey down in stages which may take days or week. On the nose this bourbon has notes of sweet vanilla and caramel, clove spice, slight maple, and nutty almond. On the palate you taste maple syrup, almond, raw bran, chocolate, deep wood and coconut. Enjoy!
